Carrot Cake

Ingredients for the cake:
  • 200 g carrot strips
  • 100 g  butter
  • 3 Eggs 
  • 80 g  frozen ginger
  • 150 g self-raising flour
  • 150 g  milk powder
  • 100 g  crème fraîche
  • 150 g  soft brown sugar
  • 1 orange
  • 4 g salt
Ingredients for the frosting:
  • 200 g cream cheese
  • 100 g icing sugar
  • 30 g  Frozen ginger
  • 4 pods star anise
  • 1 orange
Materials:
  • Food processor 
  • Mixing bowl
  • Baking tin 25 x 30 cm 
  • Grater 
  • Small saucepan
  • Scales
  • Sieve 
  • Scraper 
  • Whisk
Instructions for the cake:
  1. Pre-heat the oven to 170°C. 
  2. Grater the frozen ginger and the zest of 1 orange. Add this to the mixing bowl together with the crème fraîche, butter and sugar and beat until fluffy and smooth using the flat stirrer.
  3. Add the eggs 1 by 1 while you continue to beat and wait each time for the egg to be absorbed (perhaps the mixture will curdle, but that is no problem)
  4. Sieve the self-raising flour and the salt and add to the mixture. Mix until smooth.
  5. Finally, add the carrot, fold this in and pour the mixture into a greased baking tin. 
  6. Bake the cake for 50 min.
Instructions for the frosting:
  1. Make the star anise sugar one day in advance: break up the star anise and mix with the icing sugar. Leave to stand overnight. 
  2. Put the cream cheese, star anise icing sugar, grated ginger and grated orange in a mixing bowl.
  3. Whisk for about 1 min. 
  4. Spread over the cooled carrot cake.
  5. Enjoy!
Tips:

Add nuts to the batter for an even tastier version.
