Dry rub

  • Chicken fillet or thigh
  • 2 tsp. milk powder
  • 1 tsp. salt
  • 1 tsp. coriander powder
  • ½ tbsp. cayenne pepper  
  • 1 tsp. smoked paprika powder
  • 1 tsp. ground cumin
  • Mixing bowl 
  • Small bowl 
  • Cling film
  • Frying pan/ BBQ
  1. Mix spices, milk powder, salt and pepper well.

  2. Marinate the chicken with the rub, cover it and allow to marinate in the fridge for at least one hour.

  3. If you fry the chicken in a pan, make sure that you have enough oil in the pan to fry the chicken. Then regularly move the chicken around in the pan.

  4. If you put the chicken on the BBQ, make sure that you first sear the chicken over the whole hot coals. Then grill the chicken until cooked in the cooler part of the BBQ.
