Production takes place in a brand-new facility in Northern Germany, where the roller dried technique will be used. This is an alternative drying method to spray drying, which is used in Vreugdenhil’s own factories in The Netherlands. In roller drying, milk is dried on heated rollers, causing partial caramelisation of the milk sugars. This results in a distinctive flavour that is highly valued in chocolate applications.

In addition to its flavour profile, the technique offers functional benefits: the free fat in the milk powder binds more effectively, allowing chocolate manufacturers to use less cocoa butter. This leads to cost savings in a market where cocoa is a high-value ingredient.

Vreugdenhil Dairy Foods will exclusively market and sell the roller dried full cream milk powder from Meiereigenossenschaft eG Viöl to its customers. “We are in direct contact with major players in the chocolate industry,” says Gerben van Schaik, Commercial Director Industrial Dairy. “This partnership allows us to expand our product portfolio with a solution that meets their specific needs.”
